- 1 mug of hot water (a grown-up boils it)
- 3–4 thin slices of fresh ginger, or ¼ tsp ground ginger
- 1 tsp honey, or a little more to taste
- A squeeze of lemon, if you have one
- A cinnamon stick, if you're feeling fancy
Let's make it
- Put the ginger slices in the bottom of your mug.
- Grown-up: pour in the hot water and let it steep 5 minutes.
- Stir in the honey until it disappears.
- Add the lemon squeeze and the cinnamon stick.
- Wait until it is warm — not hot — then sip it slowly by a window and watch for snow.
Kitchen safety: Boiling water is a grown-up job, and hot mugs need a grown-up hand.

- ½ cup brown sugar
- ⅓ cup molasses
- 1 egg
- 2½ cups flour
- 1 tsp baking soda
- 2 tsp ground ginger
- 1 tsp cinnamon
- A pinch of salt
- Icing glue: 1 cup powdered sugar + a tiny splash of water
Let's make it
- Beat the butter, brown sugar and molasses together, then mix in the egg.
- Stir in the flour, baking soda, spices and salt until it forms a firm dough.
- Wrap the dough and chill it 30 minutes so it rolls without sticking.
- Roll it out about ¼ inch thick and cut squares, rectangles and triangles — your walls and roofs.
- Grown-up: bake at 350°F (175°C) for 10–12 minutes, then cool the pieces completely flat.
- Stir the icing glue until thick, then build. Walls first, roof last, decorations forever.
Kitchen safety: A grown-up handles the oven and any sharp knife used to cut the building shapes.
Ginger's North Pole Eggnog
Ginger's creamy, cinnamon-and-nutmeg eggnog — completely non-alcoholic, made for kids of all ages.

- 2 cups milk
- 2 eggs (they get fully cooked on the stove)
- 3 tbsp sugar
- ½ tsp vanilla
- ¼ tsp cinnamon
- ¼ tsp ground nutmeg, plus a pinch for the top
- A tiny pinch of ground ginger — Ginger's North Pole twist
- A pinch of salt
- Optional: a swirl of whipped cream and a cinnamon stick
Let's make it
- Whisk the eggs, sugar and salt together in a bowl until smooth and a little pale.
- Grown-up: warm the milk in a pot over medium-low heat until it steams — do not let it boil.
- Grown-up: pour the warm milk into the eggs very slowly while you whisk hard, then pour it all back into the pot.
- Grown-up: cook gently, stirring the whole time, until it thickens enough to coat the back of a spoon and reaches 160°F (71°C) — about 5–8 minutes.
- Take it off the heat and stir in the vanilla, cinnamon, nutmeg and the pinch of ginger.
- Pour it through a strainer into a jug, then chill it in the fridge until cold.
- Serve in small mugs with whipped cream and one more grating of nutmeg on top.
Kitchen safety: This eggnog is 100% non-alcoholic. Eggs must be cooked properly, so the stove and the thermometer are a grown-up job from start to finish — never drink it with raw egg in it, and keep any leftovers covered in the fridge and finish them within a day.
Ginger's North Pole Pumpkin Pie
The pie Ginger measures Christmas in. One pie, four slices, four days — and it works just as well in October as it does in December.

- 1 ready-made 9-inch pie crust (or your family's own)
- 1 can (about 2 cups) pumpkin purée — not pie filling
- ¾ cup brown sugar
- 2 eggs
- 1 cup evaporated milk (or regular milk)
- 1 tsp ground cinnamon
- ½ tsp ground ginger — Ginger insists
- ¼ tsp ground nutmeg
- ¼ tsp salt
- Optional: whipped cream, and one extra pinch of cinnamon on top
Let's make it
- Grown-up: heat the oven to 425°F (220°C) and set the crust in its pie dish.
- Whisk the eggs in a big bowl until they are smooth.
- Add the pumpkin, brown sugar, cinnamon, ginger, nutmeg and salt, and stir until there are no streaks left.
- Pour in the milk slowly and keep stirring until it looks like thin custard.
- Grown-up: pour the filling into the crust and slide the pie into the oven.
- Bake 15 minutes at 425°F, then turn the oven down to 350°F (175°C) and bake 35–45 minutes more.
- It is done when a knife poked into the middle comes out clean and the centre only wobbles a little.
- Grown-up: take it out and let it cool completely — at least two hours. Warm pumpkin pie will not slice.
- Cut it into exactly four slices. That is one whole pie, and in Ginger's maths, four days closer to Christmas.
Kitchen safety: The oven, the hot pie dish and any knife are grown-up jobs from start to finish. Pumpkin pie must cool right down before it is cut, and leftovers live in the fridge.
Turkey Approved — Contains No Turkey
Thomas “Wishbone” Turkey will only put his name on food with absolutely no turkey in it. Ginger agreed, then did all of the cooking. Mr. T: “Is it Turkish?” Ginger: “Yes.” Mr. T: “Then it’s one of my recipes.” Ginger: “That’s not what Turkish means.” Mr. T: “We’ll agree to agree.”
Ginger × Mr. T Turkish Delight
Soft rose-and-lemon squares dusted like fresh snow. “Turkish” is a place, Mr. T — not a turkey.

- 2 cups granulated sugar
- 1½ cups water, plus 1 cup cold water for the cornstarch mix
- 1 tbsp lemon juice
- ¾ cup cornstarch, plus extra for dusting
- 1 tsp cream of tartar
- 1 tsp rose water or 1 tsp lemon extract (pick one)
- ½ cup icing sugar, for the snowy dusting
- A few drops of food colouring, if you like
Let's make it
- Line an 8x8 inch pan with parchment and dust it well with cornstarch.
- Grown-up: boil the sugar, 1½ cups water and lemon juice until a candy thermometer reads 240°F (soft-ball stage), then take it off the heat.
- In a second pot, whisk the ¾ cup cornstarch and cream of tartar into the 1 cup cold water until smooth, then cook and stir until it turns into a thick paste.
- Grown-up: slowly pour the hot syrup into the paste, whisking the whole time.
- Keep it on the lowest heat and stir every few minutes for about an hour, until it is thick, golden and glossy.
- Stir in the rose water or lemon extract and any colouring, pour into the pan and smooth the top.
- Leave it uncovered at room temperature for at least 6 hours, or overnight.
- Cut into squares with a cornstarch-dusted knife and toss them in a mix of icing sugar and cornstarch.
Kitchen safety: Hot sugar reaches candy temperatures and burns badly — an adult must handle every step at the stove. This is a home-kitchen version inspired by Turkish delight, not a claim to an authentic traditional method.
Ginger × Mr. T Turkish Coffee (traditional, hot)
The traditional hot preparation, made slowly in a cezve. Grown-ups only — and nothing to do with the future North Pole iced version.

- 2 small coffee cups of cold water
- 2 heaped tsp extra-finely ground coffee (powder fine)
- Sugar to taste — none, 1 tsp or 2 tsp, added now, never later
- A cezve (small long-handled pot), or the smallest pot you own
Let's make it
- Measure the water using the cups you will drink from, and pour it cold into the cezve.
- Add the coffee and any sugar and stir once, while it is still cold.
- Set it on low heat and do not stir again.
- Watch closely: a dark foam rises to the rim in a few minutes.
- Just before it boils over, lift it off the heat and spoon a little foam into each cup.
- Return it to the heat for a few seconds until it rises once more, then pour slowly.
- Let it rest a minute so the grounds settle, and never drink the last sip.
Kitchen safety: Adults only — this is a strong caffeinated drink, and the pot and coffee are very hot. This is a simple home method inspired by traditional Turkish coffee; Mr. T did not invent it, and Ginger would like that on the record.
Ginger’s Thanksgiving Pumpkin Pie
The classic family pie for both Thanksgivings. Turkey Approved, turkey free.

- One 9-inch pie, 8 slices

- 1 unbaked 9-inch pie shell
- 1 can (15 oz) pure pumpkin purée (not pie filling)
- 1 can (12 oz) evaporated milk
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp ground nutmeg
- ½ tsp salt
- Whipped cream, for the top
Let's make it
- Heat the oven to 425°F.
- Whisk the eggs in a big bowl, then whisk in the pumpkin, sugar, spices and salt.
- Slowly whisk in the evaporated milk until smooth.
- Pour into the pie shell — it will be very full, so fill it on the oven rack if you can.
- Bake 15 minutes at 425°F, then lower to 350°F and bake 35–40 minutes more.
- It is done when a knife slid into the middle comes out clean and the centre only just wobbles.
- Cool on a rack for 2 hours before slicing. Serve with whipped cream.
Kitchen safety: A hot oven and a full, sloshy pie — a grown-up puts it in and takes it out. Slice only once it has cooled.
Ginger’s Apple Pie
Cinnamon apples under a golden lid. Ginger’s favourite smell in the world.

- Pastry for a double-crust 9-inch pie
- 6 medium apples (about 2½ lb), peeled, cored and sliced thin
- ½ cup granulated sugar
- ¼ cup brown sugar
- 2 tbsp all-purpose flour
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 tbsp lemon juice
- 1 tbsp butter, in small pieces
- 1 egg, beaten, for brushing
Let's make it
- Heat the oven to 400°F and line the pie plate with the bottom pastry.
- Toss the apple slices with both sugars, the flour, spices and lemon juice.
- Pile the apples into the shell and dot the butter over the top.
- Lay on the top crust, trim it, pinch the edges shut and cut a few steam slits.
- Brush with the beaten egg and sprinkle with a little sugar.
- Bake 50–60 minutes, until the crust is deep golden and you can see juice bubbling in the slits.
- Cool at least 1 hour so the filling sets before you cut it.
Kitchen safety: Peeling and slicing apples needs a sharp knife or peeler, so pair up with a grown-up — and the oven and hot juices are strictly a grown-up job.
Ginger’s No-Cook Cranberry-Orange Relish
Five minutes, no stove, and it makes the whole table taste brighter.

- 1 bag (12 oz) fresh or frozen cranberries
- 1 orange, washed, cut into chunks, seeds removed — peel and all
- ½–¾ cup granulated sugar, to taste
- A pinch of salt
- 1 tsp fresh grated ginger, if you like a little zing
Let's make it
- Tip the cranberries and orange chunks into a food processor.
- Pulse in short bursts until everything is chopped small — chunky, not soup.
- Stir in the sugar, salt and grated ginger.
- Taste and add a little more sugar if it is too sharp.
- Cover and chill at least 1 hour so the flavours come together. Keeps 3 days in the fridge.
Kitchen safety: No heat at all. A grown-up runs the food processor blade; everyone else does the tasting.

- Remember: this stays soft and will NOT set like cookie icing or buttercream.
Kitchen safety: This is a dairy topping with no cooking, so it must stay in the fridge until serving and go straight back afterwards. It never sets hard, so it is not for stacking or transporting.
