Ginger's North Pole Eggnog

Ginger's creamy, cinnamon-and-nutmeg eggnog — completely non-alcoholic, made for kids of all ages.

From Ginger's pantry

You'll need

  • 2 cups milk
  • 2 eggs (they get fully cooked on the stove)
  • 3 tbsp sugar
  • ½ tsp vanilla
  • ¼ tsp cinnamon
  • ¼ tsp ground nutmeg, plus a pinch for the top
  • A tiny pinch of ground ginger — Ginger's North Pole twist
  • A pinch of salt
  • Optional: a swirl of whipped cream and a cinnamon stick

Let's make it

  1. Whisk the eggs, sugar and salt together in a bowl until smooth and a little pale.

  2. Grown-up: warm the milk in a pot over medium-low heat until it steams — do not let it boil.

  3. Grown-up: pour the warm milk into the eggs very slowly while you whisk hard, then pour it all back into the pot.

  4. Grown-up: cook gently, stirring the whole time, until it thickens enough to coat the back of a spoon and reaches 160°F (71°C) — about 5–8 minutes.

  5. Take it off the heat and stir in the vanilla, cinnamon, nutmeg and the pinch of ginger.

  6. Pour it through a strainer into a jug, then chill it in the fridge until cold.

  7. Serve in small mugs with whipped cream and one more grating of nutmeg on top.

Cooking options

🔥 Stovetop — Ginger's Main Method

Gently over medium-low heat, stirring the whole time, until it coats the back of a spoon and reaches 160°F (71°C) — about 5–8 minutes.
