You'll need

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tbsp sugar
  • A pinch of salt
  • ¾ cup milk
  • 1 egg
  • 1 tbsp melted butter or neutral oil
  • ½ tsp vanilla
  • Maple syrup, for serving

Let's make it

  1. Whisk the flour, baking powder, sugar and salt together in a bowl.

  2. In a second bowl, whisk the milk, egg, melted butter and vanilla.

  3. Gently combine the wet into the dry — a few lumps are perfectly fine.

  4. Grown-up: heat a lightly greased skillet over medium-low.

  5. Grown-up: drop small spoonfuls of batter onto the skillet.

  6. Cook until bubbles form on top, flip, and cook until golden on the other side.

  7. Stack 2–3 mini pancakes, pin them with a toothpick and drizzle lightly with maple syrup.

A lightly greased skillet over medium-low — bubbles on top means it's time to flip.
