From Ginger's pantry
You'll need
- 1 bag (12 oz) fresh or frozen cranberries
- 1 orange, washed, cut into chunks, seeds removed — peel and all
- ½–¾ cup granulated sugar, to taste
- A pinch of salt
- 1 tsp fresh grated ginger, if you like a little zing

Let's make it
Tip the cranberries and orange chunks into a food processor.
Pulse in short bursts until everything is chopped small — chunky, not soup.
Stir in the sugar, salt and grated ginger.
Taste and add a little more sugar if it is too sharp.
Cover and chill at least 1 hour so the flavours come together. Keeps 3 days in the fridge.
