From Ginger's pantry

You'll need

  • ⅓ cup soft butter
  • ½ cup brown sugar
  • ⅓ cup molasses
  • 1 egg
  • 2½ cups flour
  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • A pinch of salt
  • Icing glue: 1 cup powdered sugar + a tiny splash of water

Let's make it

  1. Beat the butter, brown sugar and molasses together, then mix in the egg.

  2. Stir in the flour, baking soda, spices and salt until it forms a firm dough.

  3. Wrap the dough and chill it 30 minutes so it rolls without sticking.

  4. Roll it out about ¼ inch thick and cut squares, rectangles and triangles — your walls and roofs.

  5. Grown-up: bake at 350°F (175°C) for 10–12 minutes, then cool the pieces completely flat.

  6. Stir the icing glue until thick, then build. Walls first, roof last, decorations forever.
