The Cake

  • 1 1/2 cups finely grated carrots
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/3 cup neutral oil
  • 1/2 cup brown sugar
  • 1 tsp vanilla

Jack's Frosting ❄️

  • 4 oz / 115 g cream cheese, softened
  • 1/4 cup thick plain Greek yogurt
  • 2–3 tbsp icing sugar
  • 1/2 tsp vanilla

Method

Let's make it

  1. Whisk the flour, baking powder, baking soda, cinnamon and salt together.

  2. In another bowl, whisk the eggs, applesauce, oil, brown sugar and vanilla.

  3. Stir the grated carrots into the wet mixture.

  4. Fold the dry ingredients into the wet ingredients just until combined.

  5. Pour the batter into a greased and lined 8-inch round pan.

  6. Bake at 350°F / 175°C for roughly 30–35 minutes, checking the centre with a toothpick.

  7. Cool the cake completely before frosting.

  8. For the frosting, beat the cream cheese smooth, then mix in the yogurt, icing sugar and vanilla. Chill it if necessary.

  9. Spread the frosting over the completely cooled cake.

Cooking options

350°F / 175°C for roughly 30–35 minutes. Check the centre with a toothpick, then cool the cake completely before any frosting goes near it.
