From Ginger's pantry
You'll need
- ½ cup soft butter
- ¾ cup sugar (plus a little extra for rolling)
- 1 egg
- 3 tbsp molasses (or dark corn syrup)
- 1¾ cups flour
- 1 tsp baking soda
- 1½ tsp ground ginger
- 1 tsp cinnamon
- A pinch of salt

Let's make it
Ask a grown-up to heat the oven to 350°F (175°C).
Beat the butter and sugar until fluffy, then mix in the egg and molasses.
Stir in the flour, baking soda, ginger, cinnamon and salt until a soft dough forms.
Roll walnut-sized balls, then roll each one in a little sugar.
Place them well apart on a lined tray — they spread.
Grown-up: bake 9–11 minutes. Pull them out while the middles still look soft; they finish setting on the tray.
