From Ginger's pantry

You'll need

  • ½ cup soft butter
  • ¾ cup sugar (plus a little extra for rolling)
  • 1 egg
  • 3 tbsp molasses (or dark corn syrup)
  • 1¾ cups flour
  • 1 tsp baking soda
  • 1½ tsp ground ginger
  • 1 tsp cinnamon
  • A pinch of salt

Let's make it

  1. Ask a grown-up to heat the oven to 350°F (175°C).

  2. Beat the butter and sugar until fluffy, then mix in the egg and molasses.

  3. Stir in the flour, baking soda, ginger, cinnamon and salt until a soft dough forms.

  4. Roll walnut-sized balls, then roll each one in a little sugar.

  5. Place them well apart on a lined tray — they spread.

  6. Grown-up: bake 9–11 minutes. Pull them out while the middles still look soft; they finish setting on the tray.
