You'll need
- 12 frozen tart shells (or pastry cut to fit a muffin tin)
- ½ cup brown sugar
- ⅓ cup corn syrup or maple syrup
- 2 tbsp soft butter
- 1 egg
- 1 tsp vanilla
- A pinch of salt
- Optional: a small handful of raisins

Let's make it
Ask a grown-up to heat the oven to 400°F (205°C) and set the tart shells on a tray.
Whisk the brown sugar, syrup, butter, egg, vanilla and salt until smooth.
Drop a few raisins in each shell if you like them.
Fill each shell about two-thirds full — they bubble up as they bake.
Grown-up: bake 18–20 minutes until the filling is puffed and just set.
Cool them completely in the tin. The filling stays molten hot for a long time.
