Holly sets the scene
Ripe banana and oats, baked into soft little bites. They come out lumpy and uneven, and that is genuinely the point of the recipe.
From Ginger's pantry
You'll need
- 1 very ripe banana (the spottier the better)
- ¾ cup rolled oats
- A shake of cinnamon
- Optional: 1 tbsp peanut butter or seed butter
- Optional: a small handful of raisins
Use what you've got
- No oats? Any plain rolled cereal, crushed a little, will do.
- Nut-free house? Seed butter, or skip the spread entirely.
- Raisins, dried cranberries or a few berries — dealer's choice.

Let's make it
GROWN-UP: heat the oven to 350°F (175°C) and line a tray.
Mash the banana in a bowl until there are almost no lumps left.
Stir in the oats and cinnamon, plus the nut or seed butter if you're using it, until it clumps together.
Drop rough spoonfuls onto the tray. Do not tidy them up.
GROWN-UP: bake 12–14 minutes until set and lightly golden, then cool on the tray.
If the first batch looks odd, do a second take. Holly insists this is normal.

🔥 Oven — Ginger's Main Method
350°F (175°C) for 12–14 minutes, until set and lightly golden, then cool on the tray.
💨 Air Fryer — Ginger's Small-Batch Method
Sit the spoonfuls on parchment in the basket, about 5 at a time, and cook at 320°F (160°C) for 8–10 minutes. They are soft when hot, so let them cool in the basket before moving them.
