From Ginger's pantry
You'll need
- 1 ripe banana
- 1 cup rolled oats
- ½ tsp cinnamon
- Optional: raisins, dried cranberries or a few berries
- Optional: any pantry add-in you already have — a spoon of seeds, a few chocolate chips
- Optional: a star cookie cutter
Use what you've got
- No cutter, no problem. Rounds are the original shape of nearly every cookie ever made.
- Any dried fruit already in the cupboard works.
- Two very ripe bananas make a softer, sweeter batch.

Let's make it
GROWN-UP: heat the oven to 350°F (175°C) and line a tray.
Mash the banana well, then stir in the oats and cinnamon until you have a thick, sticky mix.
Fold in your add-ins.
Press the mix flat on the tray, about ¼ inch thick, and cut stars with a cutter — or just drop spoonfuls and flatten them into rounds.
GROWN-UP: bake 12–15 minutes until firm at the edges, then cool completely on the tray.

🔥 Oven — Ginger's Main Method
350°F (175°C) for 12–15 minutes, until firm at the edges, then cool completely on the tray.
💨 Air Fryer — Ginger's Small-Batch Method
Cut the stars first, then cook them on parchment in a single layer — about 6 at a time — at 320°F (160°C) for 9–11 minutes, until firm at the edges. Cool them fully before lifting or they break.
